Today, we’ll be making super easy Keto Zucchini Fries!
When I was a kid, I hated Zucchini with a passion. I could never understand why so many loved Zucchini. As I grew older I began to realize that I didn’t hate Zucchini, I hated how others prepared them – so I never tried it myself.
I was well into my twenties before trying them again and realized that I actually loved them. Whether the Zucchini was baked, fried, noodled (that’s a word), it’s a very diverse vegetable! My favorite way to eat them is to turn them into crispy fries.
But how do we get crispy fries without all the flour and bad oils?
Easy.
For Keto, we simply cut them into equal sized pieces, dredge in an egg wash, then roll in an almond flour/parmesan cheese/seasonings mixture. Then we spray them just a little bit of avocado or Olive oil cooking spray and Air Fry them at 400F.
That’s it! The only major appliance you’ll need is a good Air Fryer. Mine is a Cosori 5qt Air Fryer and I’ve been using it for a couple years now. I use it almost daily! So much that the brand name has been wiped clean off from cleaning it so much.
